Cheesy Coconut Biscuits (Gluten-Free, Grain-Free, & To Live For!)

The first time I tried these biscuits, I remember thinking, “How can something be SO good, yet SO healthy?!”  Seriously, these biscuits remind me of a super-delicious-but-totally-unhealthy biscuit you’d get at a restaurant.  In fact, word on the street is that these biscuits are kind of similar to the Red Lobster biscuits — which I’ve only had once in my life, but I remember them being ridiculously delish — so that’s sayin’ somethin’!

Cheesy Coconut Biscuits are super moist and soft in the middle, with an irresistible crispy-cheesy top — what more could you want from a biscuit?!  Plus, they’re quick to make, with ingredients we always have in our kitchen anyways.  They make the perfect side or appetizer to any meal, and you won’t believe that they are actually healthy, too! 🙃

Cheesy Coconut Biscuits

Ingredients:  

(Makes 6 biscuits)

3 organic, free-range eggs

2 tbsp. organic virgin coconut oil, melted

3 tbsp. organic full-fat coconut milk (from a can)

1/4 tsp. sea salt

1/4 tsp. garlic powder

1/4 tsp. onion powder

1/4 cup coconut flour

1 cup raw, organic, grass-fed cheese — shredded (My absolute favorite is from Beyond Organic — it’s literally the healthiest dairy on earth — a true superfood!)

Cheesy Coconut Biscuits

Directions:

1. Preheat oven to 400 degrees.

2. Blend eggs, coconut oil, coconut milk, and spices in a food processor or blender.

3. Stir in the coconut flour (or blend lightly) until no lumps remain.

4. Mix in 3/4 cup of the shredded cheese with a spoon.

5. Grease a muffin pan with coconut oil or butter, and scoop biscuit batter into the pan so that it makes 6 biscuits.

6. Top the 6 biscuits with the remaining 1/4 cup of shredded cheese.

7. Bake at 400 degrees for 12-15 minutes.
