Growing up, pancakes were one of my all-time favorite foods (especially if there were chocolate chips involved! 🍪). And I’ve always been a firm believer that pancakes can (& should) be enjoyed at any time of the day, and not just be reserved for breakfast! 😏
As a little girl, I could sure devour my fair share of flapjacks (okay, who am I kidding — I could devour my fair share of pretty much ANYTHING 😬…and I guess not much has changed in that regard 😆).
But anyways, the problem with most traditional pancakes is that they’re definitely NOT part of a healthy breakfast (or lunch or dinner for that matter).
In fact, they’re typically made with refined flour & sugar, and/or chemical-laden pancake mixes (Bisquick, anyone?! 👈 That one totally brings me back to my childhood!).
Then to top it all off (literally), don’t forget to smother your pancakes with store-bought sugary & uber-processed maple “syrup”. Talk about CARB CITY! 👎
But I’m here today to proclaim the good news to my fellow pancake-lovers: You DON’T have to give up your pancakes in order to have abundant health! You can have your (pan)cake & eat it too! 🤗
These pancakes are grain-free, gluten-free, sugar-free, low-carb, & bursting with healthy fats! They’re the perfect treat to make any ordinary day extra special! ☺

Gluten-Free & Grain-Free Coconut Flour Pancakes
Ingredients:
(Makes about 6-8 pancakes)
- 3 free-range organic eggs
- 3 Tbsp. organic virgin coconut oil, melted
- 3 Tbsp. full-fat coconut milk
- Choice of sweetener to taste (I used 3 Tbsp. xylitol + a few pinches of powdered stevia)
- ⅛ tsp. sea salt
- ⅛ tsp. vanilla extract
- Cinnamon to taste (optional)
- 3 Tbsp. coconut flour
- ½ tsp. baking powder
- 1 Tbsp. organic virgin coconut oil or grass-fed butter (for cooking the pancakes)
Directions:
- In a medium-sized bowl, use a whisk or fork to mix eggs, melted coconut oil, coconut milk, xylitol/stevia (or sweetener of choice), sea salt, cinnamon, & vanilla extract.
- Add coconut flour & baking powder, and continue to whisk together until thoroughly mixed.
- Melt 1 Tbsp. of coconut oil or grass-fed butter in a skillet on medium heat.
- Spoon 2-3 tablespoons of pancake batter into skillet, making pancakes about 3-4 inches in diameter.
- Flip when pancakes start to form bubbles around the edges (~2-3 minutes).
- Cook the opposite side of the pancakes for ~1 minute or less.
- Serve with your favorite toppings, & enjoy!!
Serving Suggestions:
You can top your pancakes with fresh berries, or even make a berry “syrup” by melting frozen berries with a little water & stevia. 🍓
You could also spread some melted coconut butter and/or nut butter on top (one of my fave ways to devour a shortstack!). 🥥
If you’re more of a traditionalist & want your maple syrup, opt for an organic, local maple syrup if possible (it’s much less processed & has more nutrients). I don’t eat maple syrup very frequently, but I don’t have a problem with indulging in a little high-quality, nutrient-rich maple syrup every now & then! 🥞
I normally like butter on my pancakes too, but these pancakes didn’t even need butter because of all the coconut oil in the batter & in the pan. #ilovehealthyfats 🙌
One of my more recent cravings & new favorite ways to enjoy pancakes involves a sweet-&-savory combo: Top the pancakes with some organic grass-fed beef hot dogs (cut into small slices & heated in a skillet with coconut oil), & drizzle with a little organic maple syrup. Oh, & sometimes I scramble a couple eggs & put them on the same plate as the pancakes & hot dogs so I can eat it all together. SO YUMMY! 😋
The combo of pancakes + fried hot dog slices + scrambled eggs + maple syrup totally reminds me of a McGriddle!!! 😍
(Ya know, those uber-unhealthy but insanely delicious breakfast sandwiches from McDonald’s?? 😬 CONFESSION: I used to LOVE those things, & they used to be my go-to early-morning pre-volleyball-tournament breakfast, years before I ever knew anything about healthy eating…Needless to say, I’ve come a long way! 😅)
